Shirat Roim (Shepherds Song) is a boutique dairy making quality sheep and goat cheeses. The dairy makes hard, semi-hard, soft and semi-soft cheeses using traditional methods common in Europe, without preservatives, food coloring or wax coating.

Shirat Roim dairy represented Israel in three cheese world championships, held in  Bergen Norway in 2018  and in France in 2015 and 2017, and won 7 medals: 1 super gold on top 16 best cheeses in the world and 1 silver on World Cheese Awards (WCA 2018-2019), silver medal on 2017,   gold, 2 silver and 2 bronze on 2015.
In 2009, 5 of the dairy's cheeses won gold and silver medals in Israel's cheese contest. The cheese Inbar, winner of the gold medal, represents Israel in the World Cheese Book. 

After 9 years of making cheese in Kibbutz Reshafim, the dairy moved to Kibbutz Lotem, to give visitors the complete experience.

At the Lotem dairy (near Karmiel) you can watch the making and ripening processes, taste and buy cheese, participate in workshops and enjoy some special house dishes, all based on the dairy's cheese.

House of Cheese, adjacent to the dairy at Kibbutz Lotem, is open to the public on weekends and holidays, 9am-4pm in winter, and 10am-5pm in summer. During the week, you can buy cheese with advance notice.

Michal Mor Melamed, the dairy's cheese-maker, is a veteran speech and language therapist who stumbled across the world of cheese by chance during a summer paragliding vacation in Switzerland's Bernese Alps in 2005. Since then, she has mastered this profession in Israel, Switzerland, France and Italy and today she provides training for dairies overseas.

In May 2014 Michal was accepted as an honorary member of the Global Cheese Guild (Guild Internationale Des Fromagers confer'erie De Saint Ugozon) named after Saint Augustine, in a respectable ceremony held at the French ambassador's house in Israel.

In June 2015, during Mondial du Fromage in France, Michal was accepted as an honorary member of the prestigious Sainte-Maure de Touraine cheese-makers association. At the 2017 Mondial du Fromage in France, Michal was appointed as a judge in the judge's panel of the esteemed contest. 
At the World Cheese Awards 2018-2019, Michal was part of the judging team  on the largest and important competition of cheeses ever. 
The chesses are Kosher – under the Supervision ofMisgav Regional Council – Rabbi Uziel Eliyahu.
